In view of Christmas, today I propose a very tasty and easy to make recipe: cheese and peanuts sablés.
Savoury small biscuits perfect to be offered to friends during an aperitif, or to give as small and delicious Christmas gifts.
I love the combination of peanuts and cheese, but if you prefer you can use other nuts, such as pistachios, walnuts, hazelnuts… in short, whatever you prefer.
Whether you prepare them for yourself or for friends… these Sablés are an indispensable treat.

Cheese and peanuts sablés
Ingredients
- 1+ 1/3 cups (170 g) pastry flour
- 1 stick + 1 tbsp (120 g) soft unsalted butter
- 3 medium (45 g) egg yolks, room temperature
- 1.5 oz (45 g) grated Parmesan cheese
- 2 oz (60 g) grated Emmental cheese
- 3.75 salt
- 1 g ground pepper
- 2 oz (60 g) unsalted toasted peanuts
Extra
- egg yolk
- Milk
- unsalted toasted peanuts
Instructions
In the bowl oof a stand mixer, fitted with paddle attachment, on low speed, knead the butter with the egg yolks until well combined.
Add the grated cheeses and mix to combine, then add the sifted flour with salt and pepper.
When you get a smooth dough, add the peanuts and mix to combine.
Between 2 baking sheets, roll out the dough 8 mm thick.
Refrigerate for about 5/6 hours.
Then with a 1.5 inches (4 cm) cookies cutter, cut out the discs from the dough.
Refrigerate for 8 hours.
Heat fan oven at 320F - 160°C.
Brush the surface of the sables with egg yolk and milk mixture, place a 1/2 peanut on top and bake for 22/23 minutes.
Let cool on a wire rack.
