
Here we are again, the last day of the year! I had both time and energy to prepare a blogpost this year. Normally, I’m so focused on Christmas that after that, I’m just beat and can’t bring myself to even think about New Year’s Eve, let alone dessert.
I wanted to make a light, fresh and easy dessert, and I had looots of leftover lemons after Christmas. The best thing about this mousse, except that it’s delicious of course, is that it only requires four ingredients and is super easy to make! I prefer mousse without egg yolks because I think yolks add too much flavor (a flavor I personally don’t appreciate, at all).
I prefer cocktails quite sweet and strong without too much citrus juice but I really do love a good French 75. It’s well balanced and fresh without being too tart. And most of all it’s perfect for New Year’s Eve. I hope you’ll like these recipes, which would be perfect for the upcoming months as well.. With that said, I wish you all a very Happy New Year! Easy 4-Ingredient Lemon Mousse
Serves 2
I really do prefer a mousse without egg yolks, light, airy and perfect after a heavy dinner. This mousse is both delicious and super easy to make!
Ingredients
Lemon Mousse
- Zest from 1/2 lemon
- 1 tbsp. lemon juice
- 1 large egg white
- 2 1/2 tbsp. granulated sugar
- 125 ml (1/2 cup) heavy cream
- Lemon Twists
- Lemon zest
- Whipped cream
To serve
Instructions
- Start by making two lemon twists. Using a vegetable peeler, cut out two long lemon peels and even them out with a knife. Wrap the peel around your finger to create a twist.
- Zest 1/2 lemon and set aside.
- In a medium bowl, combine the lemon juice and egg white. Beat until frothy, then slowly add the sugar and beat to soft peaks. Set aside.
- In a large bowl, beat the cream to soft peaks and stir in the lemon zest.
- Gently fold the egg whites into the whipped cream – the mixture will look slightly curdled at this point and that’s normal! The next step will make it look much better..
- Divide the mixture between two glasses, and using a hot spoon (I placed the spoon in a cup of hot water) smooth the surface. You may need to repeat this a few times, simply reheat the spoon in-between.
- Place the glasses in the fridge until cold. Decorate with lemon zest, whipped cream and lemon twists.



French 75
Makes 1 cocktail
Ingredients
French 75
- 30 ml gin
- 15 ml lemon juice
- 15 ml sugar syrup
- Champagne
- Lemon Twist
To serve
Instructions
- Combine gin, lemon juice and sugar syrup in a cocktail shaker and fill with ice.
- Shake until cold, then pour into a glass and fill up with champagne.
- Decorate with a lemon twist and enjoy!
