I made this gingerbread tower back in 2018, and I even saved the template because I wanted to share it but as I made it the day before Christmas Eve I guess I just got busy with other things. Today I found the template in a drawer and figured.. why not share it? So here goes – I hope you like it

For this gingerbread tower, I used my go-to recipes for both the gingerbread dough and royal icing – you can find them both HERE. You may need to adjust baking time as the pieces are quite large, just make sure to keep an eye on them while baking. Feel free to use store bought dough if you prefer!

Start by printing the gingerbread tower template, which you can download through the button above. Thicker paper works best so it’s easier to trace and cut. Cut out each piece carefully. You’ll notice the template lines are a little wobbly – I drew them by hand and decided to keep them because I wanted to keep the exact shape for the template.

When rolling out your dough, aim for a fairly thin layer. You want the tower to be sturdy, but if the dough is too thick it will puff up during baking and lose its shape, making assembly trickier.

It’s easiest to roll the dough directly on baking paper. Cut out four walls (with windows) and four roof pieces using your template. Once baked, let all the pieces cool completely before moving on.

Next, attach the “windows” to the inside of each wall using either royal icing or melted sugar glue (simply heat granulated sugar in a saucepan until it melts completely but be careful, it’s very hot!). I left one window without “glass” so I could put a small, battery operated fairy light inside.

Prepare your royal icing and decorate all the pieces before assembling the tower, it’s much easier to pipe details when the pieces are flat. Leave to dry completely.

When everything is ready, it’s time to assemble your gingerbread tower. Use melted sugar glue to attach the walls and roof, then pipe along the seams with royal icing for a cleaner look. Dust with icing sugar if desired, and place fairy lights inside.
