Easy Plum Cake

Last week, I visited one of my favourite gardens with my friend Olivia, where I picked these absolutely incredible dahlias. The day after, I had planned to bake a plum cake and when I saw the flowers and cake together, I realised they were pretty much made for each other. The colours matched perfectly! It was so beautiful that it turned into a was longer photoshoot than I had planned for, but I really don’t mind.

So many fruits are at their peak now, and plums are one of them (at least here in Sweden). This cake is super easy to make, and so delicious. I added a bit of vanilla and a hint of cinnamon to the recipe, and I love to serve it with vanilla ice cream, but it’s perfect to serve it as it is!

Easy Plum Cake

Ingredients

  • 180 g all purpose flour (1 ½ cups)
  • 1 ½ tsp baking powder
  • ¼ tsp flaky salt
  • 100 g salted butter, softened (1 scant stick)
  • 180 g granulated sugar (¾ cup + 2 tbsp)
  • 1 large egg at room temperature
  • ¼ tsp vanilla powder
  • 125 ml milk at room temperature (½ cup)
  • 300 g plums (about 6) pitted and sliced
  • 1 tsp granulated sugar
  • ¼ tsp cinnamon

Instructions

  • Preheat your oven to 175°C (350°F). Grease a 20 cm (8 inch) pan and line it with parchment paper. 
  • Mix the flour, baking powder and salt into a medium bowl. Set aside.
  • In a large bowl, beat the butter and sugar until light and creamy, about 2-3 minutes. Add the egg and vanilla and beat until smooth.
  • Fold in the flour mixture and milk in additions, beginning and ending with the flour. Stir until combined. Pour the batter into the prepared pan and place the plum slices on top. Combine 1 tsp sugar and cinnamon in a small bowl, then sprinkle the mixture on top.
  • Bake the cake for 40-47 minutes until the cake is golden brown or until a skewer inserted into the cake comes out clean with only a few crumbs. Let the cake cool for 15 minutes inside the pan before turning it out onto a wire rack to cool completely.
